A tight, crunchy palate with distinct cool climate Riesling characters W I N E M A K I N G Hand-picked in late April, the fruit was crushed and destemmed to press and cold settled, acids were typical for this Riesling. Settled juice was warmed and inoculated stainless and fermented at 14 – 15 degrees until dry.

- Fresh Salmon Sashimi
- Root Vegetables Roasted in the Oven. These basic ingredients are a fantastic complement to this Tasmanian Riesling’s light, crisp taste. Anything more substantial would overpower the dish's subtle flavours.
- Broccoli Tasmanian Apple Salad. Instead of the usual mayonnaise, which might conflict with Riesling's sharp acidity, this simple salad uses mustard and cider vinegar to create a flavorful dressing.
- Lemon Caper Halibut. Try this easy-to-make grilled fish with a basic sauce if you're serving our Cazadora Riesling with your meal. The wine and fish flavours are highlighted in this dish because of the simplicity of the ingredients.
- Piccata de Pollo. Chicken Piccata draws much of its taste from the acidic lemon juice and saline capers used in its preparation. Our Tasmanian Riesling’s clear flavours won’t overwhelm the modest flavours from the chicken and the sauce. If you prefer a somewhat lighter version, skip the flower dredging and use just a bit less olive oil. You may need just a touch of flour at the end to give the sauce a little substance
